‘Star Frost’ Echinops (Echinops bannaticus), also called Globe Thistle, is an eye-popping beauty in frosty white with spherical flowers on sturdy stems. Rising from thistle-like deep green leaves with silvery undersides, ‘Star Frost’ will bloom from mid-summer to early fall. Plant them in a sweep for dramatic effect. At 3-4 feet tall they are just right for a perennial bed, cutting garden, or pollinator garden - bees and butterflies love them too.

36-48” tall x 24-36” wide. Find superpower with ‘Star Frost’ Echinops (Echinops bannaticus). Your perennial bed will wake up with the lovely contrast created by these easy-care amazing flowers. Lavender and colorful Salvia are beautifully contrasted by the unusual texture and silvery-white spheres of ‘Star Frost’. Not fussy about soil type, it just needs good drainage and a sunny spot for best performance. Requiring water while it’s growing, it is drought tolerant the rest of the year. Pollinators love this plant - and don’t forget cut flowers! Fresh or dried they are lovely additions to the flower vase. For dried flowers, cut them before they open and dry upside down. For fresh flowers, harvest when blossoms are halfway open. Be sure to leave some standing for birds and winter interest. Fun fact: The name Echinops comes from two Greek words meaning ‘hedgehog appearance.’

Growing Echinops (Globe Thistle) & Eryngium (Sea Holly)
Echinops (Globe Thistle) & Eryngium (Sea Holly) are very showy, Old World perennials grown for their attractive foliage and uniquely-shaped summer-blooming flowers. They are rich in nectar for feeding butterflies and bees of all types. Resistant to browsing rabbits and deer.

Preferred growing conditions:

  • Echinops and Eryngium grow well in most any type of soil including clay that doesn't sit wet.
  • Mulch with common mulching materials.
  • They are xeric (waterwise) and once established by the end of the second growing season do well with infrequent deep watering.
  • Plant in full sun.
  • Just a few handfuls of compost and Yum Yum Mix in the planting hole is enough. These plants don't like rich, compost-enhanced soils.
  • Special comments:

    • Deadheading will prolong bloom. Echinops will re-seed themselves so leave some seed heads on the plants.
    • Echinops plants are somewhat short-lived and should be replaced every three to four years or as they lose vigor.
    • Eryngium is longer lived when grown hard (not too much water and only a little fall fertilizer).

    Garden Care

    • Fertilize in the fall with Yum Yum Mix and good quality compost.
    • Leave plants standing and cut back hard in mid-spring. The large seeds are eagerly sought out by seed-eating songbirds.
    • Echinops can be divided in mid-spring. Eryngium is a tap rooted plant and does not like to be disturbed or moved.
