Harvest the Flowers for Aromas and Cooking! by Patrice LeBovit Lovely Lavenders Among the most versatile, beautiful and easy xeric plants to grow are the lovely Lavenders. Lavender has been known and used for centuries for so many useful purposes - decorative, medicinal, and agricultural, to name a few. The scent of lavender is one of the most popular of all and varies from sweet and spicy to deep and musky. The colors of this versatile plant are also well-loved, from the flowers that range from white (Alba), to a luscious dark blue-purple (Sharon Roberts), to the soft foliage that ranges from a deep sea-green to a pale frosted silver (Silver Frost).The lavender species provides dramatic, consistent color and form to a garden's structure in all seasons, is long-lived and requires little care once established.
Xeriscape Lavenders Lavender Care Caring for Lavender is simple.These plants require little water once established - supplementary weekly watering when it doesn't rain or when it is really hot outside, or in very hot desert climates, some afternoon shade, should keep your Lavenders healthy. But Lavenders don't like to have their feet constantly wet.These plants aren't susceptible to insect damage, and provide food for important pollinators like bees and butterflies throughout most of the season, plus they're resistant to rabbits and deer. After the first early summer bloom, dead-heading the flower stalks will usually stimulate a second bloom that lasts well into the fall season.Top-dressing with Yum Yum Mix® and Planters II lightly in the late fall, and again after the first summer dead-heading will keep these plants blooming and happy. Pruning them back in the spring will encourage healthy new growth each year and lots of fragrance and flowers in the garden.

Cooking with Lavender Use the dried flowers of Lavender to make potpourri and dried arrangements. Here are some ideas for using lavender in your cuisine: - Take care that the plants have no chemical fertilizers or pesticides on them.
- Pick flowers that are in their prime. Wash and dry in the same manner you would leaf lettuce.
- Crush dried Lavender flowers, add them to sugar, and store in an airtight jar until ready for use. Use a sieve to separate the sugar and flowers. The scented sugar can be used in cakes, cookies, whipped cream, jams, and other sweets for a delicate flowery flavor.
- Add Lavender to water to create an infusion. Strained, this makes a nice addition to teas, lemonade, or other summer drinks.
- Use a tiny bit sprinkled on a salad or in your vinaigrette dressing.
- Use as a dry rub on roasted meat such as a leg of lamb or on baby back ribs. Dried Lavender lends a nice smoky flavor to meat, poultry or fish that is just wonderful.
- Use the Lavender stems in lieu of metal or wood skewers for small pieces of meat. Soak the stems in water for 5 minutes before skewering the meat and placing on the grill.

Spanish lavender (L. stoechas) and cold tender Lavandula dentata are the best varieties for hot, humid, mild-winter climates like Texas and the Southeast.
